Description:
A bold, richly textured Cabernet with aromas of black cherry, black olive, leather, pencil shavings and cinnamon. The palate delivers layers of red, blue and black fruits with accents of tobacco, caramel and toasted oak. Chewy tannins provide structure while the finish is smooth and polished. The fruit comes from three distinct Paso Robles growing areas, including Willow Creek District, El Pomar District and Estrella District, adding complexity and depth.
Pairing Recommendation:
Excellent with Prime Ribeye, Prime NY Strip, beef tenderloin, braised short ribs or rack of lamb. For Midtown Provisions, pair with a Prime Ribeye. Grilled steak is particularly well suited to the wine's ripe fruit, tobacco and toasted-oak character.
Serve: 60–65°F. Since this is a 2020, open and taste first; approximately 20–30 minutes of air should be sufficient.
