Description:
A classic, richly structured Napa Valley Cabernet with layers of black plum, dark cherry, cassis, blackberry and boysenberry, complemented by dark chocolate, mocha, black licorice, fennel, mint and gravelly earth. Well-integrated oak adds subtle sweet spice and depth, while velvety tannins provide a polished, powerful texture and long finish. Wine Enthusiast notes that the 2019 has the structure to drink well through 2033.
Pairing Recommendation:
Excellent with Prime Ribeye, Prime NY Strip, beef tenderloin, Wagyu burgers, braised short ribs or grilled mushrooms. For Midtown Provisions, pair with a Prime Ribeye or Prime NY Strip. The producer specifically recommends grilled steak and burgers with this Cabernet.
Serve: 60–65°F. Since this is a 2019 with some bottle age, open and taste first; approximately 20–30 minutes of air should be plenty in most cases.
