Description: A classic, food-friendly Paso Robles Cabernet with rich blackberry, cassis, plum and dark cherry flavors accented by graphite, pepper, cedar, cocoa and warm spice. It offers a nice balance between ripe California fruit and more savory Cabernet character, with structured tannins and refreshing acidity carrying through the finish.
Pairing Recommendation: Excellent with Prime Ribeye, Filet Mignon, NY Strip, Wagyu burgers, meatloaf or aged cheddar. For Midtown Provisions, I’d pair this one with a Prime Ribeye. Eberle has specifically recommended ribeye with earlier vintages, while its current Vineyard Selection Cabernet recommendations include filet mignon.
Serve: 60–65°F, with about 20–30 minutes of air.
