Description:
A bold North Coast Cabernet with generous black cherry, blackberry, plum and blueberry, complemented by cedar, tobacco, brown sugar, licorice and warm spice. It has a broad, rich palate with firm Cabernet tannins and an approachable, fruit-driven finish. The winery's 2018 bottling was 100% Cabernet Sauvignon and aged in a combination of French and American oak.
Pairing Recommendation:
Excellent with Prime Ribeye, NY Strip, beef tenderloin, Wagyu burgers, tri-tip or Beef Wellington. Dough specifically recommends beef dishes, and I'd feature it at Midtown Provisions with a Prime Ribeye.
Serve: 60–65°F; about 20–30 minutes of air should suit its approachable style.
