Brand: Donati Family Vineyard
Wine: Cabernet Sauvignon
Region: Paso Robles, California
Style: Rich, fruit-forward Cabernet Sauvignon
Description:
A polished Paso Robles Cabernet with generous black cherry, blackberry and dark berry fruit, accented by chocolate, pepper, cedar, spice and subtle oak. Donati’s Cabernet tends toward an approachable, fruit-driven style with enough tannin and acidity to provide structure without becoming overly heavy. The winery ages its red wines in a combination of French and American oak.
Ratings: These vary by vintage. Recent releases have performed particularly well: 2020 – 92 Points James Suckling, 92 Tasting Panel and 90 Wine Enthusiast; 2021 – 89 Wine Enthusiast; 2022 – 92 Wine Enthusiast.
Pairing Recommendation:
Excellent with Prime Ribeye, NY Strip, Wagyu burgers, beef short ribs, grilled mushrooms or aged cheeses. For Midtown Provisions, I’d pair this with a Prime NY Strip with sautéed mushrooms—Donati itself highlights steak and mushrooms as a pairing for its Cabernet.
Serve: Around 60–65°F. Give it approximately 20–30 minutes to breathe before serving.
