Description:
An elegant, highly rated Santa Cruz Mountains Cabernet with a cooler-climate character than many Napa or Paso Robles Cabernets. The 2018 shows cassis, blackberry, dark cherry and black fruit, layered with dried herbs, chocolate, lavender, earthy undertones and subtle tobacco. Fresh acidity and fine-grained tannins give it excellent structure, while several years of bottle age are allowing the wine to develop greater savory complexity.
Pairing Recommendation:
Excellent with rack of lamb, Prime NY Strip, filet mignon, roast beef, venison or aged cheeses. For Midtown Provisions, I’d feature this with a Rack of Lamb—Wine & Spirits specifically recommends lamb, and the wine’s herbal, earthy character is a particularly nice match.
Serve: Around 60–65°F. This 2018 can handle some air; I’d give it 45–60 minutes in a decanter before serving.
