Description:
A highly rated, luxurious Paso Robles Cabernet with concentrated black fruit, pomegranate and blueberry, layered with tobacco, mocha, bay leaf, clove, nutmeg and vanilla. The palate is rich and opulent, with notes of chocolate-covered raspberry and beautifully polished, velvety tannins. Aging in French oak adds depth and spice while maintaining freshness and an impressively long finish.
Pairing Recommendation:
Excellent with Prime Ribeye, NY Strip, beef tenderloin, braised short ribs, rack of lamb or aged cheeses. For Midtown Provisions, I’d feature this with a Prime Ribeye—the wine has the concentration and tannin structure to stand up beautifully to a richly marbled steak.
Serve: Around 60–65°F. Give it about 45–60 minutes to breathe before serving.
