Brand: Chateau Ste. Michelle
Wine: Cold Creek Vineyard Cabernet Sauvignon
Region: Columbia Valley, Washington
Vineyard: Cold Creek Vineyard
Style: Single-vineyard Cabernet Sauvignon
Description:
A powerful, concentrated Washington Cabernet from Cold Creek Vineyard, one of Chateau Ste. Michelle’s oldest estate vineyards, planted beginning in 1973. Its warm, dry growing conditions and low-fertility soils produce small, thick-skinned berries that give the wine deep color, concentrated black fruit and substantial structure. Expect black cherry, blackberry and cassis with notes of dark chocolate, graphite, tea, spice and oak, supported by firm tannins and a long, rich finish.
Ratings: These vary by vintage. For example, the 2021 received 93 Points from Owen Bargreen and 92 Points from James Suckling, while the 2020 received 91 Points from Wine Enthusiast.
Pairing Recommendation:
Excellent with Prime Ribeye, NY Strip, rack of lamb, beef short ribs, hearty pasta or aged cheeses. Chateau Ste. Michelle specifically recommends this Cabernet with rack of lamb with cracked pepper and rosemary. For Midtown Provisions, that would be a fantastic featured pairing.
Serve: Around 60–65°F. I’d give it approximately 30–60 minutes to breathe, depending on the vintage.
