Description:
A savory, Bordeaux-inspired Washington Cabernet Sauvignon with flavors of black cherry, blackberry and black currant, layered with notes of smoked olive, mocha, black tea, grilled herbs, cedar and earthy undertones. Unlike the plush, heavily oaked style of many California Cabernets, Chateau Smith leans toward an Old World-inspired profile, balancing dark fruit with herbal and earthy complexity and structured tannins. Charles Smith describes it as a dry, Pacific Northwest Cabernet with Bordeaux influence.
Pairing Recommendation:
Excellent with charbroiled steak, roast beef, pot roast, beef stew, lamb or a meat-and-cheese board. For Midtown Provisions, I’d pair it with a Prime NY Strip—the wine's savory, herbal character and firm tannins are particularly well suited to a char-grilled steak.
Serve: Around 60–65°F. Give it about 20–30 minutes to breathe before serving.
