Description:
A highly rated, richly structured Napa Valley Cabernet with layers of dark plum, blackberry, black raspberry, dark cherry and blueberry, complemented by intriguing notes of cedar, leather, cocoa nib and tea. The 2021 spent 18 months in 100% French oak, 50% new, contributing additional depth and polish. Finely integrated tannins and balanced acidity lead to a long, complex finish.
Pairing Recommendation:
Excellent with Prime Ribeye, NY Strip, beef tenderloin, braised short ribs, lamb or mature cheeses. For Midtown Provisions, I’d pair this one with a Prime Ribeye—the Cabernet has enough concentration and tannin to stand up beautifully to a richly marbled steak.
Serve: Around 60–65°F. Give it approximately 30–60 minutes to breathe before serving.
