The 2018 vintage has had time to develop additional complexity, with softened tannins and more savory, mature notes emerging alongside its concentrated dark fruit.
Pairing Recommendation:
Excellent with Prime Ribeye, NY Strip, beef tenderloin, braised short ribs, rack of lamb or aged cheeses. For a Midtown Provisions pairing, I’d recommend a Prime Ribeye—the steak’s rich marbling complements the Cabernet’s structure, dark fruit and developing savory character.
Serve: Around 60–65°F. For the 2018 vintage, I’d open it about 30 minutes before serving and taste before deciding whether it needs additional air.
