A structured, expressive Argentine Cabernet Sauvignon with flavors of blackcurrant, blackberry and dark plum, complemented by notes of cedar, tobacco, dried herbs, pepper and subtle spice. With the additional bottle age of the 2017 vintage, the tannins have had time to soften while the wine develops more savory, earthy complexity alongside its dark-fruit character.
Pairing Recommendation:
Excellent with Prime Ribeye, NY Strip, beef tenderloin, braised short ribs, lamb chops or aged cheeses. For a Midtown Provisions pairing, I’d recommend a Prime NY Strip—its robust beef flavor works particularly well with the wine’s dark fruit, herbal character and mature savory notes.
Serve: Around 60–65°F. Because this is a 2017 vintage, open it about 20–30 minutes before serving; if you notice sediment, decant gently before pouring.
