A mature, full-bodied Napa Valley Cabernet Sauvignon showing blackberry, cassis, black cherry and dark plum, with developing notes of cedar, tobacco, cocoa, dried herbs and warm baking spice. Bottle age has helped soften the tannins and bring forward more savory, earthy complexity while retaining the wine’s concentrated dark-fruit character.
Pairing Recommendation:
Excellent with Prime Ribeye, filet mignon, beef tenderloin, braised short ribs, rack of lamb or aged cheeses. For Midtown Provisions, I’d pair this one with a Prime Ribeye—the richness of the beef works especially well with an aged Cabernet’s softer tannins and developing savory notes.
Serve: 60–65°F. Because it’s a 2018, I’d be a little more conservative with air: open it about 20–30 minutes before serving rather than automatically giving it a long decant. If there’s sediment, decant gently primarily to separate the wine from the sediment.
